Ingredients

  • 1 cup corn kernel, drained
  • 1 cup cherry tomato, halved
  • 1 cucumber, finely diced
  • 2 tbsp cilantro, chopped
  • 1 tbsp olive oil
  • 0.5 lime, juiced
  • 0.25 cup mayonnaise
  • 0.5 lime, zested and juiced
  • 1 garlic clove, finely grated
  • 1 lb raw shrimp, peeled, deveined, patted dry, and finely chopped
  • 0.5 cup panko breadcrumb
  • 0.25 cup fine cornmeal
  • 1 egg
  • 2 scallions, thinly sliced
  • 0.5 tsp smoked paprika
  • 0.75 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oils

Instructions

  1. 01

    Make the fresh relish

Set out a medium bowl, a small bowl, a cutting board, and a sharp knife. Rinse and thoroughly dry the produce. Halve the tomatoes, finely dice the cucumber, and chop the cilantro. Drain the corn well. In the medium bowl, toss 1 cup corn kernels, 1 cup cherry tomatoes, 1 small cucumber, 2 tbsp chopped cilantro, 1 tbsp olive oil, and the juice of ½ lime. Set the relish aside while you prepare the cakes. | Why: A little resting time lets the lime season the vegetables without softening them too much.

  2. 02

    Stir together the lime mayo

In the small bowl, stir ¼ cup mayonnaise with the zest and juice of ½ lime and 1 small garlic clove, finely grated. Cover and refrigerate until serving. Wash the cutting board and knife after preparing the raw shrimp in the next step, and keep them separate from the ready-to-eat relish and sauce. | Why: Lime and garlic give the creamy dip a bright, savory lift, and chilling helps its flavors meld.

  3. 03

Mix and shape the shrimp cakes

Pat 1 lb raw shrimp thoroughly dry, then finely chop it into small pieces. In a large bowl, combine it with ½ cup panko breadcrumbs, ¼ cup fine cornmeal, 1 large egg, 2 scallions, thinly sliced, ½ tsp smoked paprika, ¾ tsp kosher salt, and ¼ tsp black pepper. Mix just until evenly combined. With damp hands, shape into 8 patties about ½ inch thick and place them on a clean plate. Wash your hands and any surfaces that touched the raw shrimp. Set a large nonstick skillet near the stove. | Why: Dry shrimp and a brief, gentle mix help the cakes hold together while staying tender.

  4. 04

Pan-fry until crisp and cooked through

Heat a large nonstick skillet over medium heat for 2 minutes. Add 2 tbsp olive oil and swirl to coat. When the oil shimmers, add 4 cakes in a single layer and cook for 3–4 minutes per side, adjusting the heat if they brown too quickly. Transfer to a clean plate and cook the remaining cakes in the same way. The outsides should be deep golden and crisp; check the center of a cake with an instant-read thermometer and cook until it reaches 160°F. If needed, return the cakes to the skillet for another minute or two. | Why: Moderate heat crisps the cornmeal coating while giving the shrimp and egg binder time to cook safely.

  5. 05

    Rest briefly and serve

Let the cakes rest on the clean plate for 2 minutes, then serve hot with the chilled relish and lime mayo. Set out extra napkins; the edges should stay crunchy while the centers are juicy and tender. | Why: A short rest lets the cakes settle so they hold together neatly when served.
